Grilled Chicken Salad with Tomato and Avocado










  • Olive oil: 2 tbsp
  • Lime juice: 2 tbsp
  • Tomatoes, boiled, peeled and pureed: 2 tbsp
  • Soy sauce: 1 tbsp
  • Grated ginger: ¾ tsp
  • Chicken breasts, boneless, 4 oz
  • Oil: 1 tbsp
  • Salad greens: 5 cups
  • Peeled mango, diced: 1 cup
  • Avocado: ¾ cup



  1. Preheat grill.
  2. Take a bowl and mix soy sauce, tomato puree, 2 tbsp avocado, lime juice, ginger and oil. Place chicken in a plate and pour the batter onto chicken. Reserve some dressing for salad.
  3. Let chicken get marinated for 5 minutes.
  4. Now grill chicken for 5 minutes each side and slice it into strips crosswise.
  5. Place avocado, mango and greens on serving plate. Layer chicken onto greens and pour the served batter over.
